What to do with 999 yellow squash? Make SQUASH Patties!
I got this recipe from Betty at church, who got it from her grandmother. It’s now a favorite in our house. In fact, last night we had nothing but squash patties for dinner! (Can’t wait until the tomatoes ripen. One of my all time favorite meals is a stack of sweet and salty squash patties and a pile of sliced tomatoes. YUM!!
Here’s the recipe:
4 cups of squash, shredded
1 cup of Bisquick
Mix together, drop by spoonfuls into a frying pan with the bottom of the pan just covered in vegetable oil. Brown on both sides until done. Allow to cool and drain on paper towels and salt and pepper to taste.
Ethan enjoys his dipped in sour cream. I like them just the way they are!
