Inspired by 28 Springs (fab new restaurant in Siloam Springs that is TOTALLY worth the drive!), I’ve been anxious to try my hand and making Brussels sprouts. Our friend Merry in Iowa claims its the simplest thing ever. A quick internet search landed me here. I modified the recipe a bit and here’s how it turned out.
- 6 strips of bacon
- 1 small yellow onion
- 1 pint of Brussels sprouts, halved
- 2 tablespoons brown sugar
- 2 tablespoons balsamic vinegar
Cook the bacon. Reserve 2 tablespoons of the drippings. Cook onions until soft. Add sprouts cut side down and sprinkle with brown sugar. Cook until beginning to brown. Then add balsamic vinegar and toss while cooking. Add the bacon (chopped) and serve.
